Chemex
Why Chemex? A Chemex is essentially a larger version of a pour over. It is a simple way to brew the beloved pour over for multiple guests at once. Like a pour over party! Holding to the cleanliness and smooth body that a pour over creates, a Chemex is convenient when brewing for a group, creating a consistently delicious batch from start to finish.
- Grind: medium fine
- Brew time: 4 minutes
- Water temp: off-boil
- Brew ratio: 1:16
- 31 g fresh coffee
- 500 g water
Bring the water to a boil and grind your coffee medium fine. Place a filter in the Chemex vessel, ensuring that the triple-layered portion is over the spout. Saturate the filter and vessel with hot water, then empty it out.
Pour the grounds into the filter and shake gently to even the bed out.
Again, you will be pouring the water in four pulses. Wet the grounds with twice the amount of water as you have coffee (about 62g in this case). Allow the coffee to bloom for 30 seconds.
Pour the water in a circular pattern starting from the center. Avoid pouring directly onto the filter, as water could drip through without much direct contact with the grounds. Pour in three more pulses - the first to 200 grams, the next to 400, and the final to 500. Allow 10 seconds before beginning the next pulse.
Let the water drip through entirely. The entire brew should take between 3:30-4:30. If your brew was too short, consider either grinding your coffee slightly finer next time, or possibly pouring slower. If the brew was too fast, you could use a more coarse ground or a faster pour.
Dump your filter and grounds, and enjoy the delicious cup! Once the coffee is emptied into mugs, clean out your Chemex.
